You guys know we thoroughly enjoy comfort food like pizza and pasta, but there’s something about spring that makes us want to try new recipes and incorporate fresh ingredients into our diets.
One dish that screams spring to us is Caprese. We never really appreciated this dish until our early twenties and it has since become one of our favorites. The thought of mixing tomatoes, mozzarella, and basil together seems like a simple dish that would just be “alright.” But when those flavors combine it’s like fresh from the garden magic. Caprese is fresh, refreshing, and perfect for a warm spring day.
For this post, we decided to take Caprese to another level and create an appetizer using RITZ Crackers, from Target. Who else does all their grocery shopping at Target? RITZ are so undeniably good and you can use them for so many things: dips, crusts, and even as a topping. There’s just something about these flaky crackers that are so crowd pleasing.
The best part about this appetizer is that we got to use our new basil plant. We definitely have a hard time keeping plants alive but when food’s involved it makes it easier, right? We use basil in a multitude of dishes so we thought why not invest in a basil plant. We were definitely inspired by the changing of the seasons and Earth Day. So if you guys have any great basil recipes let us know (cocktails included)!
Ingredients:
- RITZ Crackers
- Reduced Fat Cream Cheese
- Balsamic Vinegar
- Cherry Tomatoes
- Mozzarella Balls
- Basil Plant
Directions:
1 | Cut your cherry tomatoes and mozzarella balls in fours. Chop your basil leaves.
2 | Mix the balsamic vinegar with the cream cheese. There is no real amount here, we just kept adding balsamic until the taste was as strong as we wanted.
3 | Take a cracker, spread the cream cheese mixture on it. Then add one piece of mozzarella, one piece of tomato, and some basil. Repeat until you have a platter full.
That’s it! This recipe is so simple and how pretty is it?! This would be a great appetizer to make for entertaining a large group of people!
