Custom ice cream sandwiches have gained popularity in recent years. Places like Coolhaus, CREAM, Diddy Riese, and The Baked Bear have found instant success. Not surprising since their product is amazing.
However, we can’t ignore the fact that these trendy desserts are packed with sugar and empty calories. For this reason we try to space out our visits to once a month (read week).
You all know we’re basically addicted to desserts. So anytime we can make our own at home we’re down. And when said desserts can be made healthier we’re happier than a golden retriever puppy (now you’re thinking of a frolicking puppy. YOU’RE WELCOME).
Since it’s pumpkin spice season, otherwise known as Fall. We decided to make a seasonal treat. Meet our “Reduced Guilt Pumpkin Ice Cream Sandwich.” We’re calling it reduced guilt because Trader Joe’s uses it, and the word “skinny” is definitely not cool anymore.
Ingredients:
- 2 Fiber One Pumpkin Bars
- 1 Large Scoop of EDY’S Slow Churned Pumpkin Ice Cream (about 1/2 cup)
Directions: Place a scoop of ice cream in between the two pumpkin bars and enjoy 🙂
