Low Carb Burrito Bowl {Made With Cauliflower Rice}
We’ve been trying to eat healthy this month, which is REALLY hard for us. We’re those girls that will eat a healthy breakfast and lunch so we think we can eat a whole pizza for dinner. We’re THOSE type of dieters. So finding a balance has been a long time coming for us. We also can’t give up dessert, so the balance for us comes in the form of “I’ll eat healthy all day and reward myself with this chocolate chip cookie.”
In order for us to eat healthy meals they have to taste good. Bottom line. It may sound so simple but those of you that are health freaks know that 80% of healthy food doesn’t taste good. & if you refuse to admit this then please stop lying to yourself. Broccoli will never taste as good as pizza. But also good for you because I’m sure you look amazing in your bikini. You win.
Trader Joe’s recently released frozen cauliflower rice. We knew we had to jump on the bandwagon and give it a try. So we went and bought six bags aka the rest of their stock. Since it’s called rice the first thing that came to mind was a burrito bowl. Just like Chipotle but less calories and carbs! & before you shy away from this recipe we have to tell you its delicious. It really is. The cauliflower is actually more flavorful than white rice (in my opinion). Once you get past the difference in texture you wont miss white rice. Promise!
Here we go….
Ingredients:
- 1 cup Trader Joe’s Organic Riced Cauliflower
- 1/4 cup Bird’s Eye Ultimate Southwest Blend Frozen Vegetables
- 1/4 cup water
- A couple dashes of taco seasoning (or more depending on your liking)
- 1/4 cup Trader Joe’s Lite Mexican Cheese Blend
- 1-2 Tablespoons Trader Joe’s Reduced Guilt Chunky Guacamole
Directions:
- In a frying pan combine the cauliflower, vegetable blend, and water over medium heat.
- When the water starts to seep into the mixture add the taco seasoning. Mix continuously until all the water is gone.
- Lower the heat and stir in the shredded cheese.
- Pour into a bowl and top with guacamole.
Wait, that’s it? I know! It’s so easy. Also, this guacamole is really incredible. I’d put it on everything if I could. But I hate the parking situation at Trader Joe’s so I try to keep my visits per week to one!
Overall this meal has about 190 calories, and 15g of carbs.

It’s SO good! We cant wait until Trader Joe’s gets the cauliflower rice back (August). But if you grow your own you should go for it!
