Lately, we’ve been eating as clean as we can, mainly avoiding inflammatory oils and added sugars. In turn, we’ve been making all of our meals instead of eating packaged foods. It’s honestly been nice to cook more, and it’s more affordable than buying pre-made meals. However, we still don’t like to spend too much time in the kitchen so easy, quick recipes have become our bread and butter.
We’ve also been eating gluten-free at home, which actually hasn’t been too difficult once we found recipes we enjoyed. My favorite so far has been these wraps. I saw a TikTok that inspired me to try them, and they were a hit at our house! It’s really hard to find clean sauces but Primal Kitchen makes some great options and their buffalo sauce is my favorite (I even use it as a salad dressing).
Ingredients:Â
- Primal Kitchen Buffalo Sauce
- Can of chickpeas
- Bag of cauliflower florets
- Shredded iceberg lettuce
- Siete Cassava Flour Tortillas (or any other gluten-free option you prefer)
- Ranch- You can certainly make your own but we like the Chosen Foods Ranch since it’s clean. You can also omit this so the wraps are dairy free.
Directions:
- Preheat oven to 425 degrees and line a baking sheet with parchment paper
- Rinse and drain your can of chickpeas. Add to the baking sheet
- Cut up cauliflower into smaller pieces and add to baking sheet with chickpeas.
- Drizzle in olive oil and bake for 30 minutes
- Once baked, add to a mixing bowl and toss in buffalo sauce. I would say to use 1 Tbsp of cause per wrap (but measure with your heart)
- Warm cassava flour tortillas on the stove
- Assemble your wrap- lettuce, chickpea mixture, and then drizzle some ranch on top
