Aren’t traditions the best? It’s so special to have something that you and your family or friends do year after year. Humans like stability, which is hard to find most of the time. There are always going to be random speed bumps in life that slow you down and stress you out. But traditions offer stability, even if only for a brief moment.

I personally look forward to watching the Macy’s Thanksgiving Day Parade every single year. It’s something that brings me comfort and happiness year in and year out.

Last year we didn’t get a Christmas tree and it felt strange to neglect a WORLDWIDE tradition. We used all the relavent excuses to justify our decision: It’s too expensive, they’re too messy, where will we put it? But bringing home a Christmas tree brings us so much joy and that joy outweighs all of those excuses. Needless to say we won’t be skipping that tradition ever again.

One tradition that many families have are holiday recipes. I’m sure 99% of Thanksgiving gatherings include green bean casserole. It’s become a staple dish, and no one even thinks twice about it. Imagine if you walk into your families home Thanksgiving afternoon and the green bean casserole is no where to be found? The great meltdown of 2015 would be sure to follow.

We look forward to all the food that comes along with Thanksgiving, but these cornflake topped cheesy potatoes really make our heart skip a beat. We haven’t been home for Thanksgiving since we moved to California (since 2009. Sad, we know), so it’s up to us to get these cheesy potatoes to the table Thanksgiving day.

This year we had a pre-Thanksgiving with our roommates and busted out this recipe to try to impress them (TBD if they were impressed- but we’re hopeful).

Cornflake Topped Cheesy Potatoes by Twinspiration

Ingredients: 

  • 2 lbs Frozen “Southern Style” Hash Browns
  • 1 Can Cream of Chicken Soup
  • 1 Can Cream of Potato Soup
  • 8 oz Shredded Sharp Cheddar Cheese
  • 1 cup Sour Cream
  • 1/2 cup Melted Butter (resume 1/4 cup for top)
  • 1 tsp Salt
  • 1/4 tsp Pepper
  • 1/2 cup Chopped Green Onion
  • 2 cups Corn Flakes
Directions: 
  1. Preheat oven to 350 degrees. Thaw hashbrowns.
  2. Combine soups, cheese, sour cream, 1/4 cup melted butter, salt and pepper, onion. Mix together. Add the potatoes.
  3. Pour into buttered 13 x 9 inch pan
  4. Top with crushed corn flakes
  5. Drizzle 1/4 cup melted butter on top
  6. Bake at 350 degrees for one hour
