Chocolate Chip Baked Oatmeal

Chocolate Chip Baked Oatmeal | Twinspiration

I’ve been trying to eat cleaner and that’s easier when you have some easy recipes on rotation. I originally found this Cookie Baked Oatmeal recipe on @callascleaneats and fell in love. I don’t really eat eggs so I made some slight modifications. See below for the recipe.

Ingredients:

  • 1/2 cup oats
  • 1/2 spotty banana
  • 1/4 cup unsweetened applesauce
  • 1/4 cup milk
  • 1/2 tsp vanilla
  • A little liquid stevia (I use the one from Trader Joe’s)
  • A pinch of salt
  • 1/4 teaspoon baking soda
  • 1-2 Tbsp dark chocolate chips (I love these)
  • 1 Tbsp ground flax seed
  • 7oz porcelain ramekin (I love this $3 one from Target)
  • Optional: half a scoop of vanilla protein powder (this one is my fave since its clean)

Directions:

  1. Preheat oven to 350 degrees
  2. Blend all ingredients, except chocolate chips, in a blender until well combined
  3. Pour batter into ramekin-mix and top with chocolate chips
  4. Bake for 30 minutes and let cool for a couple of minutes because your dish will be hot to the touch
  5. Enjoy!
