Banana Cupcakes With Peanut Butter Frosting
When we were younger, we scarfed down peanut butter and banana sandwiches like there was no tomorrow. Some kids love peanut butter and jelly, some live off of mac n cheese, but PB banana sandwiches were our solitary favorite. Now that we’re 23 years old and are more obsessed with cupcakes than sandwiches, we created a cupcake that’s sure to please our 6-year-old selves (and anyone else for that matter). We give you banana cupcakes with peanut butter frosting, enjoy!
Cupcakes (makes 36)
Ingredients:
- 1 ½ cups bananas, mashed, ripe
- 2 teaspoons lemon juice
- 3 cups flour
- 1 ½ teaspoons baking soda
- ¼ teaspoon salt
- ¾ cup butter, softened
- 2 1/8 cups sugar
- 3 large eggs
- 2 teaspoons vanilla
- 1 ½ cups buttermilk
Directions:
- Preheat oven to 275°F/135°C.
- Place cupcake liners in 3 12-cup cupcake tins (36 cupcakes total)
- In a small bowl, mix mashed banana with the lemon juice; set aside.
- In a medium bowl, mix flour, baking soda and salt; set aside.
- In a large bowl, cream ¾ cup butter and 2 1/8 cups sugar until light and fluffy.
- Beat in eggs, one at a time, and then stir in 2 tsp vanilla.
- Beat in the flour mixture alternately with the buttermilk.
- Stir in banana mixture.
- Pour batter into prepared cupcake tins and bake in preheated oven for one hour or until toothpick inserted in center comes out clean.
- Remove from oven and place directly into the freezer for 45 minutes. This will make the cake very moist. (optional)
Frosting
Ingredients:
- 2 cups creamy peanut butter
- 2 cups confectioners (powdered) sugar
- 10 Tbsp unsalted butter, softened to room temp
- 2 teaspoons vanilla extract
- ½ teaspoon salt
- 2/3 cup heavy cream
Directions:
- In the bowl of a stand mixer with a paddle attachment (or an electric handheld mixer), add the peanut butter, confectioners sugar, butter, vanilla and salt. Mix on medium-low speed until creamy and smooth.
- Slowly add the cream and beat on high speed until the mixture is light and fluffy.
- Spread on cooled cupcakes.
