Easy Greek Dense Bean Salad
Now that the weather is warming up, we’ve been craving something fresh and crunchy for lunch. We’re still on our dense bean salad kick and were inspired by this Tiktok to create our own greek inspired salad. This comes together in less than 10 minutes and one batch lasts us a couple days for lunch!
Ingredients:
- 6 small Persian cucumbers, mandolin-d
- 1/2 red onion, chopped
- 1 can of chickpeas
- 1 can of lentils
- 1 block of feta, cut into small cubes
- Dill, chopped
- Salt + pepper
- Juice of 2-3 lemons
- 2-4 Tbsp olive oil
- Oregano
- Red pepper flakes
- Grated garlic
Directions:
- Add onion, cucumbers, chickpeas, lentils, dill and feta to a large mixing bowl.
- Mix together olive oil, juice from 2-3 lemons, oregano, grated garlic, and red pepper flakes thoroughly.
- Add dressing to mixing bowl and incorporate
