Easy Lentil Tacos | Healthy + Delicious
At the end of last year Carli and I printed out the recipes we make the most often and put them in clear sheets, in a binder. It has been beyond useful, and because of that I wanted to share some of our go to recipes on this blog, for you to print out if you feel so inclined.
It almost feels silly posting this recipe because it is laughably easy, but we do make these tacos at least once a week, so it’s worth it to share.
Ingredients (makes 8 tacos):
- One can of lentils (we get these from Trader Joe’s)
- One can of diced tomatoes with chiles (this is our favorite brand)
- One box of Siete Hard Corn Taco Shells
- 1/2 packet of Siete Taco Seasoning (we like both mild and spicy)
- Diced Jalapeños (we love the Hot & Sweet ones from Trader Joes)
- FAGE Total 0% Greek Yogurt (as a substitute for sour cream)
- Hot Sauce- Our favorites are the Siete Jalapeño Botana Sauce and Yellowbird Serrano
- Shredded Iceberg Lettuce
Directions:
- Rinse and drain your lentils. Add them to a sauce pan
- Strain your can of tomatoes and add those to the sauce pan as well
- Add 1/2 packet of taco seasoning (about 4 tsp) to the sauce pan
- Mix and let heat for about 6 minutes
- When the mixture is warmed- assemble your tacos. I recommend the lentil mixture, then jalapeños, green yogurt, hot sauce, and shredded lettuce last (so it sticks to the yogurt)
That’s it! They’re truly so easy and nutritious but they’re also packed with spice and flavor. Let me know if you end up making these lentil tacos!
