I’ve been trying to eat cleaner and that’s easier when you have some easy recipes on rotation. I originally found this Cookie Baked Oatmeal recipe on @callascleaneats and fell in love. I don’t really eat eggs so I made some slight modifications. See below for the recipe.
Ingredients:
- 1/2 cup oats
- 1/2 spotty banana
- 1/4 cup unsweetened applesauce
- 1/4 cup milk
- 1/2 tsp vanilla
- A little liquid stevia (I use the one from Trader Joe’s)
- A pinch of salt
- 1/4 teaspoon baking soda
- 1-2 Tbsp dark chocolate chips (I love these)
- 1 Tbsp ground flax seed
- 7oz porcelain ramekin (I love this $3 one from Target)
- Optional: half a scoop of vanilla protein powder (this one is my fave since its clean)
Directions:
- Preheat oven to 350 degrees
- Blend all ingredients, except chocolate chips, in a blender until well combined
- Pour batter into ramekin-mix and top with chocolate chips
- Bake for 30 minutes and let cool for a couple of minutes because your dish will be hot to the touch
- Enjoy!
