Caprese Salad

We first had this Caprese Salad while visiting Shauna, our amazing sister (not by blood, by choice) from the Rae of Sparkles blog. She made it on a hot summer day and it was perfection. It’s one of those appetizers that goes with anything. Make it for a dinner party and everyone will see you as the fancy, cultured friend. See her recipe here.

We bought all our ingredients at Trader Joe’s (of course). The cheese was $4.99, the tomatoes were $2.00, the basil was $2.50, and the balsamic dressing was $1.99. So overall this dish only costs about $12.00. It can easily serve 4-6 people!

Ingredients: 

  • One package of mozzarella balls
  • One package of cherry tomatoes
  • Basil leaves
  • Balsamic Vinaigrette Dressing (we got the fat-free because TJ’s didn’t have a “light” version)

Directions: 

  1. Cut all the mozzarella balls in half and throw them in a mixing bowl
  2. Cut all the tomatoes in half and toss them in the same mixing bowl
  3. Rip up some basil leaves and put them in the bowl. Mix all the ingredients together
  4. Pour some balsamic vinaigrette dressing over the entire salad. Mix together again
  5. Cover and let marinate in the fridge for at least 15 minutes. Serve.

This recipe is so easy and very customizable. You can add tons of basil if you love basil, or go light on the dressing if you’d rather have more of a tomato taste.
