We love doing recipes on our blog but to be honest we rarely cook. So many people enjoy the process but more often than not we’re too impatient and just make something super easy that takes like two steps (ie. bowl water and add pasta). But we’re getting older and know that it’s important to take care of our bodies. And while frozen pizza is still one of our go-to meals (baby steps), this salad has become a staple as well!
We absolutely love Sweetgreen. All of their bowls and salads are healthy, fresh, and unique. But we can’t bear to spend $15 on a salad every day. It’s actually absurd. So we went on a mission to recreate the salad ourselves and we love how it turned out. Dare I say our version is better than Sweetgreen’s! We, or course, sourced our ingredient’s from Trader Joe’s but feel free to modify for whatever works for you!
Ingredients (makes two large salads):
- 1 bag organic baby spring mix salad
- 1/4 cup Trader Joe’s Green Goddess Salad Dressing
- 1/3 cup chopped onion
- 1 cup chopped grape tomatoes
- 2 Tbsp feta cheese
- 2 cookie scoops of garlic hummus
- 4 pieces of Trader Joe’s Baked Falafel
First, put your falafel in the oven. The one from TJ’s is really scrumptious and the pieces are fairly large. Two pieces per salad were more than enough!
While your falafel bakes, chop your onion and tomato. When those are chopped add them to a large mixing bowl along with your lettuce blend. Next, add your dressing and mix it all together!
Transfer the salad to two bowls and top each salad with two pieces of falafel, one tablespoon of feta, and one cookie scoop of hummus. It works better to add these ingredients after the salad is mixed.
Now enjoy! We actually prefer this dressing to the tahini dressing from Sweetgreen. It’s so refreshing and healthy!
