We rarely drink hard alcohol at home so when we do we like to make a night out of it and invent a new cocktail creation. We really wanted to concoct a new drink during the holiday season but we just couldn’t find the time. January is a bit slower for us so we decided to create a winter cocktail that was both refreshing and earthy.

Rosemary is one of our favorite herbs (our favorite being Basil). It’s somehow sharp and mild at the same time and pairs wonderfully with berries. For this drink, we knew we had to make a rosemary simple syrup and we found that the easiest way to do this is to use honey. Honey is basically liquified sugar already so it cuts the process in half.

We originally wanted to use cranberries in this cocktail since they the quintessential winter berry, but they can be difficult to find and go out of season very abruptly. So we opted for raspberries. Still a gorgeous color and absolutely refreshing.

So, here’s how you make the drink!

Ingredients:

  • 1/2 cup Honey
  • 1/2 cup Water
  • Rosemary Springs
  • 1/2 pint of raspberries, muddled
  • Champagne

First up, the simple syrup! Bring your honey and water to a boil. Boil until the honey is completely dissolved. Remove from heat and add your rosemary springs. We added two but you can add more or less depending on your rosemary preference. Steep for 1/5 hours. Remove rosemary sprigs.

Now add half an ounce of muddled raspberries to each champagne glass.

Next, add one ounce of simple syrup to each glass.

Lastly, fill each glass the rest of the way with champagne and garnish with a rosemary sprig!
